This Honey-Sweetened Strawberry Fool is a light, elegant dessert made with fresh strawberries, Greek yogurt, and honey. Naturally sweetened and easy to prepare, it’s a lovely way to enjoy strawberries without turning on the oven.
In a small bowl, combine the chopped strawberries with 1-2 tablespoons of honey and a splash of lemon juice. Gently stir and let sit for about 10 minutes, until the berries release their juices.
For a smoother fool, purée about half of the strawberries in a blender or food processor. For a more rustic texture, simply mash them with a fork. Fold the strawberry purée into the yogurt mixture, stopping before it's fully blended to create soft streaks of fruit throughout.
Stir yogurt with remaining honey and vanilla. Spoon into small glasses or bowls. Top with a few reserved strawberry pieces. Serve immediately, or chill for 20-30 minutes for a slightly firmer texture.
