In a small bowl, whisk cornstarch and orange juice until smooth. Then whisk in the soy sauce, sugar, ginger, garlic, and pepper flakes; set aside.
Trim the pork tenderloin and crosswise into short pieces and then cut into bite size. Add the pieces to the stir-fry sauce and let marinate while preparing the vegetables.
Heat the wok or large skillet and add 1 tablespoon oil. Once shimmery, stir-fry the broccoli and celery for about 3 minutes or until crisp-tender. Remove the vegetables to a plate.
Add a bit more oil to the skillet and heat. Transfer the pork pieces with cooking sauce and cook for 3 to 4 minutes, stirring often, until the pork is golden and firm.
Return the broccoli and celery to the skillet, add the squash, and cook for another 1-2 minutes or until the vegetables are tender and the pork is cooked through.
Serve over steamed rice, garnished with fresh herbs like cilantro or parsley.
