Instructions
Preheat oven to 350℉ and line a baking sheet with parchment.
Cream butter and sugar in a stand mixer. Beat in the egg, egg yolk, and molasses. Continue to beat until light and fluffy.
Sift together flour, ginger, baking soda, cinnamon, cloves and salt. Add gradually to the butter mixture.
Shape dough into 3" balls and roll in additional sugar.
Bake for 13-15 minutes or until the edges and centers are set. Let cool on the pan for 5 minutes before transferring to a cooling rack.
