Preheat your waffle iron while you make the whole wheat batter.
Whisk together the flour, baking powder, and salt.
To that bowl, whisk in the eggs, milk, oil, vanilla, and honey until mostly smooth. A few lumps are just fine.
Cook the waffles as directed in the instructions that came with your waffle iron.
Top with fresh berries, warmed pure maple syrup or anything else you love on waffles.
Notes
Flour Options: Stone-ground whole wheat flour gives these waffles a nutty flavor and hearty texture. White whole wheat flour can also be used for a lighter taste.
Sweetness: Honey naturally sweetens the batter. Use 1 tablespoon for mild sweetness or 2 tablespoons if you prefer a slightly sweeter waffle.
Optional Flavor: Add 1 teaspoon of ground cinnamon to the batter for a warm, spiced version.
Make-Ahead: Waffles freeze well. Cool completely, then freeze in a single layer before transferring to a freezer bag. Reheat directly from frozen in a toaster or warm oven.
Serving Ideas: Top with fresh berries, warmed maple syrup, yogurt, or nut butter. For a savory twist, serve with fried chicken or scrambled eggs.
