Select the sauté button on the Instant Pot and add the butter. Once the butter melts, add the onion and sauté until opaque.
Stir in the garlic and chicken; cook until the chicken is no longer pink. Cancel the sauté function and scrape the bottom of the pan to loosen any browned bits.
Then stir in the broth, rice, Italian seasoning, salt, pepper, broccoli, cherry tomatoes, and cheese. Secure the lid, be sure the steam valve is in the sealing position, and cook on high pressure for 6 minutes.
Once cooked, quickly release the pressure. Fluff the rice with a fork and garnish with fresh parsley if desired before serving.
