Instant Pot Chicken and Rice with Broccoli

This Instant Pot Chicken and Rice is a delicious and quick one-pot weeknight dinner the family will love. Parmesan cheese brings together the flavors of Italian seasoning and garlic, and the cherry tomatoes and broccoli make it a bit healthier. An easy meal any day of the week!

Chicken with rice are a perfect pairing in my book. When that chicken and rice is made in the Instant Pot, and cooks in 6 minutes, it’s almost too good to be true.
The rice is creamy, the chicken is tender and moist, and the flavors are the best of comfort food.
So the next time you find yourself short on time, but want a substantial meal ready in no time, try this Instant Pot Chicken and Rice.

Instant Pot Chicken and Rice Ingredients
To make this simple weeknight dinner, you’ll only need a few ingredients along with a couple of pantry staples and seasoning. The exact measurements are in the recipe card at the bottom of this post.
- Chicken: I’m using boneless, skinless chicken breasts that I purchased pre-cubed at the market. (I can always find them that way at Safeway). You could also use boneless, skinless thighs instead, or even leftover chicken. If using already cooked chicken warm it before stirring into the rice at the end.
- Onion and garlic: I love the softness, texture, and flavor an onion brings to this easy dish. And garlic is essential!
- Vegetables: You will need broccoli florets and cherry tomatoes. I cook the broccoli in the pot which does make it very soft. If you prefer crisper broccoli, you can cook it in the microwave and stir it in once the chicken and rice have cooked. The cherry tomatoes are tossed in whole.
- Chicken stock for cooking liquid
- Rice: Use long-grain white rice. I’m using basmati but any long-grain white rice will work.
- Parmesan cheese for flavor
- Fresh parsley for garnishing, which is optional but good!
How to Make Instant Pot Chicken and Rice
Step by step instructions are in the recipe card below, but here’s a quick overview:
Step 1: Sauté the onion, garlic and chicken
Using the sauté function, melt the butter and cook the onion, garlic, and chicken until no longer pink.

Step 2: Add remaining ingredients
Stir in the broth, rice, Italian seasoning, salt, pepper, broccoli, cherry tomatoes, and Parmesan cheese.

Step 3: Cook on high pressure
Cook on high pressure for 6 minutes and quick release the pressure once the chicken and rice have cooked.

Instant Pot Chicken and Rice with Broccoli

Ingredients
- 1.5 pounds boneless skinless chicken breasts or thighs cut into 1-inch cubes
- 2 tablespoons butter
- 1 medium onion chopped
- 3 cloves garlic minced (about 1 tablespoon)
- 3 cups chicken stock
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt or to taste
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 cups long-grain white rice well-rinsed, drained
- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 1/2 cup Parmesan cheese
- 2 tablespoons fresh parsley chopped
Instructions
- Select the sauté button on the Instant Pot and add the butter to the inner pot. Once the butter melts, add the onion and sauté for 2 to 3 minutes, or until opaque.
- Then stir in the garlic and chicken; cook until the chicken is no longer pink. Cancel the sauté function and scrape the bottom of the pan to loosen any browned bits from the onion.
- Then stir in the broth, rice, Italian seasoning, salt, pepper, broccoli, cherry tomatoes, and Parmesan cheese.
- Secure the lid, be sure the steam valve is in the sealing position, and cook on high pressure for 6 minutes. Once cooked, quickly release the pressure. Fluff the rice with a fork and garnish with fresh parsley if desired before serving.
