1.5poundsboneless skinless chicken breasts or thighscut into 1-inch cubes
2tablespoonsbutter
1medium onionchopped
3clovesgarlicminced (about 1 tablespoon)
3cupschicken stock
1teaspoonItalian seasoning

1 1/2cupslong-grain white ricewell-rinsed, drained

Select the sauté button on the Instant Pot and add the butter to the inner pot. Once the butter melts, add the onion and sauté for 2 to 3 minutes, or until opaque.
Then stir in the garlic and chicken; cook until the chicken is no longer pink. Cancel the sauté function and scrape the bottom of the pan to loosen any browned bits from the onion.
Then stir in the broth, rice, Italian seasoning, salt, pepper, broccoli, cherry tomatoes, and Parmesan cheese.
Secure the lid, be sure the steam valve is in the sealing position, and cook on high pressure for 6 minutes. Once cooked, quickly release the pressure. Fluff the rice with a fork and garnish with fresh parsley if desired before serving.
