shredded coconut

Instructions
In a small bowl, combine all of the ingredients with a whisk or small spatula.
Transfer the batter to a mug and microwave for 1 to 1 1/2 minutes. Mine is perfect at 1 minute 15 seconds. Begin checking at 1 minute.
Let cool slightly and top with buttercream frosting, whipped cream, shredded coconut, toasted or not.

Use a microwave-safe mug! Microwave-safe ramekins work too.
