2 Minute Coconut Mug Cake

Coconut Mug Cake is a decadently delicious 2 minute microwave dessert that’s perfect for coconut cake lovers. It’s a simple moist and tender mug cake you’ll fall in love with.

Ready in minutes, it’s a perfect single-serve dessert for 1… or make it a double for 2.

And filled with amazingly delicious coconut flavor by using both shredded coconut and coconut extract or coconut emulsion.

Coconut Mug Cake

We simply adore mug cakes. I’m not sure if it’s the idea of an individual dessert, the simplicity of ingredients… or how super quick they are to make.

While this mug cake is wonderful all year, I’m writing the recipe leading up to Easter. And for me, coconut cakes and Easter belong together.

Growing up, it wasn’t Easter without a coconut bunny cake. And childhood traditions are hard to break.

Thus… I’m extremely delighted when I make a coconut mug cake in the spring. All it’s missing is the bunny ears and jelly beans.

Topping Ideas for Coconut Mug Cakes

I mentioned the Easter bunny cake earlier. For me, I can’t imagine coconut cakes without buttercream frosting topped with shredded coconut. But making buttercream for a single serving dessert seems a bit much.

Shopping at Target, I found an easy store-bought frosting that I could store in the refrigerator for future coconut mug cakes or cupcakes.

However, topping the mug cake with whipped cream or ice cream is also an easy and delicious option. The men in my family prefer theirs with ice cream.

Toasted coconut flakes, which I toast in a dry nonstick skillet for about a minute, are simply a must!

INGREDIENTS IN COCONUT MUG CAKE:

  • butter
  • flour
  • sugar
  • coconut emulsion or coconut extract
  • shredded coconut flakes
  • baking powder

How to Make a Coconut Mug Cake

Mug cakes are so simple to make! Simply add all of the ingredients into a small bowl and whisk or stir until a creamy batter forms.

Or, mix the ingredients in the mug and then microwave it.

Tips on Making Mug Cakes

  • Use a microwave-safe mug! Microwave-safe ramekins work too.
  • Several of our readers like their mug cakes less sweet. Try reducing the sugar to 1 tablespoon.

2 Minute Coconut Mug Cake

Yield: 1 serving
Prep Time: 2 minutes
Cook Time: 1 minute
Total Time: 3 minutes

Coconut Mug Cake is a decadently delicious 2-minute microwave dessert that's perfect for coconut cake lovers. It's a simple moist and tender mug cake you'll fall in love with.

Ingredients

  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 tablespoons granulated sugar
  • 2 tablespoons shredded coconut
  • 3 tablespoons milk
  • 1 tablespoon sour cream
  • 1/4 teaspoon coconut extract
  • 1 tablespoon butter, melted

Instructions

  1. In a small bowl, combine all of the ingredients with a whisk or small spatula.
  2. Transfer the batter to a mug and microwave for 1 to 1 1/2 minutes. Mine is perfect at 1 minute 15 seconds. Begin checking at 1 minute.
  3. Let cool slightly and top with buttercream frosting, whipped cream, shredded coconut, toasted or not.
