Ingredients

  • 1 ½ tablespoon butter melted
  • ¼ cup all-purpose flour
  • 2 tablespoons sugar
  • ½ teaspoon baking powder
  • dash salt
  • 2 strawberries diced small
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  • In a 12-ounce (375 ml) mug or larger, melt the butter in the microwave for a few seconds. Once melted swirl it to coat the sides of the mug. Leave the remaining butter and add the flour, sugar, baking powder, diced strawberries, and milk. Mix until just combined.
  • Microwave on high for 90 seconds to 2 minutes. This will depend on the size of your mug and your microwave. Be careful not to over-microwave. The top will be just set.
  • Let cool one minute before eating. Top with cream and more diced strawberries if desired. A dusting of confectioners' sugar works beautifully too.

    I usually don't leave comments on recipes I've tried, but this one was actually way better than I was expecting. It looked a little watery as I was making it, but it came out perfect. Buttery, sweet, and moist (even tho I hate the word, it's accurate!). Definitely will be making this over and over again with our huge box of strawberries we got!! Perfect for this spring weather.

  5. This mug cake's texture was great! The only thing bad about it is that it is WAY TOO SWEET. I think it would taste much better if you did only 2 1/2 tbl of sugar or even just 2.

    1. You know what... I think you're right. I made it again today with, thankfully, very sweet strawberries and 2 tablespoons of sugar. I like it a lot. Most mug cakes do need the extra sugar but the strawberries bring added sweetness. It's a wonderful thing when you get to retest strawberry cakes in the middle of the day. Thank you!!
