I hope you’ve had a fantastic week. It’s certainly been eventful in the U.S. — if you’re into watching the news!

While January temperatures have been average in Seattle, we’re looking at a week of super-cold (at least for us) overnight lows. But even so, I found a lone tulip bulb that has broken through the soil in a protected corner of the yard. A sweet promise of spring.

For now, I’m wearing my cozy sweaters, and thick socks… and baking up a storm.

It’s what winter is all about… at least for me. Well… that and a cup of warm Lemon Ginger Tea, a can’t-put-down, page-turner-novel, and a roaring fire.

What makes winter for you?

In thinking about this upcoming week’s menus, I realized we hadn’t done 5-ingredient dinners in a while. And for those of you, like me, who are relying heavily on grocery delivery, it seems like a great week for fewer ingredient weeknight dinners!

Healthy 5 Ingredient Dinners

These healthy 5-ingredient dinners lean heavily on Mexican inspired foods. Which for me are delightfully packed with flavor, texture, and veggies. For those of you who love Asian inspired food — and a French classic, there’s something for you too.

Monday is a super easy and fast Stuffed Potato recipe with avocado, beans and salsa. If russet potatoess aren’t your thing, consider swapping for a sweet potato.

For Tuesday, we have a 4-Ingredient Healthy Chicken Enchilada Casserole that’s also quick and easy.

I promised an Asian inspired dinner. On Wednesday we’re making Quick Mu Shu Pork Wraps that are always a family favorite.

French and seafood lovers will appreciate the simplicity of Thursday’s dinner. These individual Salmon en Papillotes are easy to make with parchment paper, keeping the fish moist and tender. It’s a simple one-“pot” packet dinner.

Friday is fun night and these Chipolte Chicken Taquitos will have everyone running to the table. Bake or fry them, they’re simple, quick, and delicious.

Since this week’s dinner ideas were heavily inspired by Mexican cuisine, I couldn’t help but include my favorite Mexican Chocolate Cookies for the treat.
