Easy Hamburger Soup Recipe

To make this Hamburger Soup a meal, serve with fresh greens and slices of thick crusty bread. 

This soup is packed with healthy vegetables, high protein lean beef, all cooked in a fragrant and delicious broth. 

And best yet, it’s ready in 30 minutes or less. Sounds like the perfect weeknight meal to me! 

I don’t think there is a week that goes by where I don’t make several batches of soup. This one is always welcome at my family’s table!

How to Make Hamburger Soup

This Hamburger Soup is simmered in a rich tomato broth with lean ground beef, soft potatoes, and healthy vegetables.

The simple ingredients you likely already have on hand.

Begin by sauteeing onion, carrots, and celery in a bit of olive oil. Once softened, add the ground beef (or other ground meat of choice), garlic, and spices.

Once the meat is browned, add broth, canned tomatoes, and 2 russet potatoes that I don’t even peel. Bring to a simmer for about 20 minutes, or until the potatoes are tender.

Hamburger Soup with Vegetables

This simple, hearty soup uses chopped onion, carrots, and celery; it seems like all amazing soups begin with these ingredients.

Then, add in any additional vegetables you have on hand. Even a bag of frozen vegetables works beautifully. I especially love to add green beans and zucchini if I happen to have them on hand. Greens like spinach, cabbage, or kale are perfect too. 

What to Serve with Hamburger Soup

While the soup is simmering, prepare a quick green salad and slices of thick, crusty bread.

While this makes a fairly big pot of soup, leftovers are perfect for lunches throughout the week! It also freezes perfectly for quick meals later on.

To freeze, divide into individual servings, and freeze in an airtight container. To reheat, thaw in the refrigerator overnight before reheating. Or microwave from frozen.

This soup is so simple, it’s perfect for passing along to friends. Whether they be under the weather, recovering from surgery, or welcoming a new little to the family.

How to Make Instant Pot Hamburger Soup

This recipe can easily be made in an Instant Pot or pressure cooker. 

Switch to the Saute function and heat the insert of the Instant Pot. Add the olive oil, onion, carrots, and celery and sauté button until softened; about 3 to 4 minutes.

Stir in the ground beef and garlic. Continue to cook until the beef has browned. Turn the saute function off and stir in the beef broth, canned tomatoes, chopped tomatoes, and Italian seasoning.

Lock the lid in place and set the valve to “sealing.” Select “manual” and cook on high pressure for 8 minutes. Once cooked, quickly release the pressure.

Ingredients 

  • 1/2 tablespoon olive oil
  • 1/2 medium onion chopped
  • 2 sticks celery chopped
  • 3 carrots chopped
  • 2 cloves garlic minced
  • 1 pound extra-lean ground beef
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes optional
  • 2 14.5-ounce cans diced tomatoes with juices
  • 3 ½ cups beef broth
  • 2 large Russet potatoes diced (peeled or unpeeled)
  • Salt & pepper to taste

Instructions

  • Add the olive oil, onion, carrots, and celery to a large soup pot. Sauté for 5-7 minutes, or until softened.
  • Stir in the garlic and ground beef. Cook until the beef has browned, breaking it up slightly with a spatula as it cooks.
  • Stir in the Italian seasoning and red pepper flakes (if using) and saute for another minute until it becomes fragrant. Then add the diced tomatoes, beef broth, and chopped potatoes.
  • Increase the heat and bring the soup to a boil. Then reduce the heat to maintain a simmer. Cook for 20 to 25 minutes.
  • Season with salt & pepper as needed and top with favorite condiments: sour cream, green onions, shredded cheese, etc.

Notes

Instant Pot Hamburger Soup

This recipe can easily be made in an Instant Pot or pressure cooker.
