Hamburger Soup is a classic, easy, and hearty comfort food soup loaded with vegetables, lean beef, tomatoes, and chunks of soft potatoes. It's the perfect quick and easy soup for busy days. And is ready in 30 minutes or less.
Add the olive oil, onion, carrots, and celery to a large soup pot. Sauté for 5-7 minutes, or until softened.
Stir in the garlic and ground beef. Cook until the beef has browned, breaking it up slightly with a spatula as it cooks.
Stir in the Italian seasoning and red pepper flakes (if using) and saute for another minute until it becomes fragrant. Then add the diced tomatoes, beef broth, and chopped potatoes.
Increase the heat and bring the soup to a boil. Then reduce the heat to maintain a simmer. Cook for 20 to 25 minutes.
Season with salt & pepper as needed and top with favorite condiments: sour cream, green onions, shredded cheese, etc.

Instant Pot Hamburger Soup
This recipe can easily be made in an Instant Pot or pressure cooker. Switch to the Saute function and heat the insert of the Instant Pot. Add the olive oil, onion, carrots, and celery and sauté button until softened; about 3 to 4 minutes.Stir in the ground beef and garlic. Continue to cook until the beef has browned. Turn the saute function off and stir in the beef broth, canned tomatoes, chopped tomatoes, and Italian seasoning.Lock the lid in place and set the valve to "sealing." Select "manual" and cook on high pressure for 8 minutes. Once cooked, quickly release the pressure.
