If you love mug cakes and sometimes crave s’mores, this is for you.
And I do crave the smell of marshmallows roasting over an open fire—the crackle and pop and the gathering of those around a summer fire pit.
It’s not easy to capture the bonfire indoors, but you can satisfy those flavor cravings with this simple smores mug cake.
And make it for one… or two.
It’s a small-batch dessert that’s utterly delicious. Much like our popular mug cakes, this is special.
The chocolate cake base alone is worth making. It’s so moist, tender, and chocolaty delicious.
What to Love About a S’mores Mug Cake
Three things we love about a s’mores mug cake:
- Ingredients are simple and likely on hand
- Does not include an egg
- Two minutes to utterly delicious
S’mores Mug Cake Ingredients
- All-purpose flour: Be careful to measure and level the flour. Too much flour can make the cake dense.
- Unsweetened cocoa powder: Both natural unsweetened cocoa powder and Dutch-processed cocoa powder work equally well.
- Granulated sugar: Helps bring out the chocolaty flavor.
- Baking powder: Essential to help the mug cake rise.
- Salt: Ya pinch of salt enhances the flavor.
- Milk: I always use whole milk because it’s what I keep on hand and gives baked goods a richer taste. That being said, 2%, 1%, skim, or even almond milk would work fine too.
- Oil: You can use canola, vegetable, or melted coconut oil.
- Vanilla extract: Use pure vanilla extract, if possible.
- Semi-sweet chocolate chips: I love the extra chocolate flavor they add, so I highly recommend using some if you have them on hand.
HOW TO MAKE A MUG CAKE
You will need a 12-ounce or larger microwave-safe mug. I like to grease the mug with butter or nonstick spray.
Whisk together the dry ingredients before adding the milk, oil, and vanilla extract; stir until just combined.
When I’m making one mug cake, I mix the ingredients in the mug. When I’m making 2 or more, I like to use a separate bowl.
Sprinkle the tops of the unbaked mug cake with chocolate chips—microwave for 1 to 2 minutes. For me, 1 minute and 10 to 15 seconds is always perfect.
You want to microwave the cake just until it’s set. Otherwise, it can become dry very quickly.
How to Roast Marshmallows in the Oven
It’s so easy… and no campfire is needed. Set the oven to broil and raise the rack to near the top.
Then, simply add large marshmallows to a baking pan. Watch carefully, but broil the marshmallows for 10 to 15 seconds or until nicely browned.
Flip the marshmallows over with a spatula and broil for a few seconds. Remove from the oven promptly.

2 Minute S'mores Mug Cake
2 Minute S'mores Mug Cake is a quick fix for a s'more craving with simple ingredients and a microwave. It's a chocolate, marshmallow, graham cracker dream.
Ingredients
- 1/4 cup all-purpose flour
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons granulated sugar
- 1/4 teaspoon baking powder
- pinch of salt
- 3 tablespoons milk
- 3 tablespoons oil
- 1/4 teaspoon pure vanilla extract
- 1 tablespoon semi-sweet chocolate chips
- 2 tablespoons crushed graham crackers
- 3 marshmellows
Instructions
- Grease a 12-ounce (or larger) mug with nonstick cooking spray or butter. Set aside.
- In a separate mixing bowl, whisk together the flour, unsweetened cocoa powder, granulated sugar, baking powder, and salt until well combined. Add the milk, oil, and pure vanilla extract and continue mixing until fully combined.
- Pour the batter into the prepared mug and sprinkle the chocolate chips on top.
- Microwave and microwave for 60 to 90 seconds, the center of the cake should be just set. In my microwave (1100 watts) it takes about 75 seconds.
- Meanwhile, set the oven to broil. Add large marshmallows to a baking pan. Watch carefully and let broil for 5 to 7 seconds (or untiled nicely browned). Using a spatula, flip the marshmallows over and cook for another 1 to 2 seconds.
- Carefully remove from the mug from the microwave. Top with roasted marshmallows, crushed graham crackers and chocolate bar pieces (or additional chocolate chips. Let cool slightly and enjoy!
Notes
Adding Marshmallows to the Mug Cake without Roasting
Microwave the mug cake about 50 seconds. Add the marshmallows and microwave for an additional 20 to 30 seconds.
How to Roast Marshmallows in the Oven
Set the oven to broil and raise the rack to near the top. Place marshmallows on a baking pan. Don't leave the oven, and watch carefully as the marshmallows roast very quickly. It should take seconds.
With a spatula, flip the marshmallows over and broil for another few seconds. Remove from the oven promptly.
