This easy Italian Slow Cooker Pork Roast is incredibly flavorful with tender, fall-apart pork. With 5 simple ingredients, plus pantry spices, it's a winner for weeknight cooking or Sunday supper.
Put the pork roast in a slow cooker. Arrange the onion and potatoes around the roast in the base of the slow cooker.
Pour the broth over the pork roast, potatoes, and onions.
Sprinkle the garlic powder, Italian seasoning, salt, and pepper on the roast and potatoes. Place the lid on the crockpot and cook on high for 4 hours, or low for 8 hours.
Remove the roast from the slow cooker and let rest for 7 minutes. Meanwhile, transfer the potatoes and onions to a serving platter and reserve cooking juice to serve with the roast. Slice the roast and transfer to the platter.
Notes
Use pork loin roast to get good slices (tenderloin would also work), but if you’d prefer this recipe to yield shredded pork a boneless pork shoulder or pork butt would work best here.
