Apple Cinnamon Blondies are one of my favorite fall treats. The flavors of the season imbue every single bite. Perfect for lunch sacks, after school snacks, tailgating and game day treats!
Preheat the oven to 350℉ and grease a 9 x 9-inch or 8 x 8-inch square baking pan and set aside.
In a medium bowl, whisk together cooled melted butter and brown sugar. Then whisk in the eggs and vanilla.
With a spatula, mix in the flour, baking powder, cinnamon, baking soda, and salt until combined. Fold in the apples.
Spread the batter evenly into the prepared pan. Bake for 25-30 minutes, or until it is light brown and a toothpick inserted in the middle comes out with moist crumbs attached. Transfer to a rack to cool completely. Cut into 24 squares.

I love Golden Delicious apples in this recipe, but Pink Lady and Fuji are also really good.
