This Apple Cinnamon Blondies recipe is one of my favorite fall treats. The flavors of the season imbue every single bite.




They are perfect for sack lunches, after school snacks, tailgating and game day treats. Truly, delicious all season long.

I use one large baking apple in the recipe and often leave it unpeeled. Although that’s up to you and your preferences. I love Golden Delicious apples but Pink Lady and Fuji are also really good.

Ingredients

  • 1 cup butter (2 sticks)
  • 1 1/4 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2-1/4 cups all-purpose flour
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1-1/2 teaspoon ground cinnamon
  • large baking apple, chopped

Instructions

Preheat the oven to 350-degrees. Grease and flour a 9 x 13-inch baking pan, or line with parchment paper and set aside.

In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. In a large bowl or stand mixer, cream together butter and sugar until light and fluffy, about 3 minutes. Add the eggs and vanilla, mixing until it is combined. Mix the flour mixtures into the butter mixture and beat to combine. Fold in the apples.

Spread batter evenly into the prepared pan. Bake in a 350-degree oven 20-25 minutes, or until it is light brown and a toothpick inserted in the middle comes out with moist crumbs attached. Transfer to a rack to cool completely. Cut into 24 squares.
