This easy Apple Cinnamon Blondies recipe is one of my favorite fall treats. The flavors of the season imbue every single bite. They are perfect for sack lunches, after-school snacks, tailgating and game day treats. Truly, delicious all season long!

I love Golden Delicious apples but Pink Lady and Fuji are also really good. Did you know there are 2,500 varieties in the United States alone? How many apples will I need?

I use one large baking apple in the recipe and often leave it unpeeled. However, that’s up to you and your preferences.

Apple Cinnamon Blondies Recipe

Ingredients

  • 1 cup butter melted (2 sticks)
  • 1 1/2 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 1/4 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • large baking apple chopped

Instructions

  • Preheat the oven to 350℉ and grease a 9 x 9-inch or 8 x 8-inch square baking pan and set aside.
  • In a medium bowl, whisk together cooled melted butter and brown sugar. Then whisk in the eggs and vanilla.
  • With a spatula, mix in the flour, baking powder, cinnamon, baking soda, and salt until combined. Fold in the apples.
  • Spread the batter evenly into the prepared pan. Bake for 25-30 minutes, or until it is light brown and a toothpick inserted in the middle comes out with moist crumbs attached. Transfer to a rack to cool completely. Cut into 24 squares.

Notes

I love Golden Delicious apples in this recipe, but Pink Lady and Fuji are also really good.
