These easy Apple Pie Bars or Apple Crumble Bars are a sweet treat perfect in apple season, or anytime you're craving apple pie. But easier to make. They're buttery, warmly spiced, and fall-apart tender.
Preheat the oven to 375 degrees F. and line a 9x13 pan with foil with an overhand on all sides. Lightly grease the pan with softened butter.
In a medium bowl, mix the flour, brown sugar, granulated sugar, cinnamon, cardamom, and salt. Mix in the egg and cut in the butter. You can use a pastry blender, a food processor (although be careful not to over mix, you want crumbles), or even a stand mixer. Mix until pea-size clumps form. Press half of the crumble into the bottom of the prepared pan.
Shred the apples and squeeze out as much moisture as possible. Add them to a separate bowl with the sugar, cornstarch, and cinnamon; mix until all the apples are coated. Sprinkle the apple mixture over the bottom layer of crumble in the pan. Crumble the remaining dough over the apples.
Bake for 25 to 30 minutes, or until the top is beginning to turn golden. Cool completely before cutting into bars or squares.
