Apple Pie Bars: Easy Apple Crumble Bars

These easy Apple Pie Bars or Apple Crumble Bars are a sweet treat perfect during apple season or anytime you’re craving apple pie. They’re also easier to make.

They’re buttery, warmly spiced, and fall-apart tender.

A sweet childhood friend recently asked me for links to our crumb bar recipes. While chatting, it suddenly dawned on me that we’d never done an apple crumble bar.

Um… it didn’t take me long to begin experimenting and testing recipes. Oh, what a delicious task that was!

And soon, had one I loved. When my husband happily took a bite and declared it tasted like apple pie, I knew the recipe was ready for you!

Ingredients for Apple Pie Bars

While the ingredient measurements are in the recipe card at the bottom of this post, here’s all you need to make these delicious apple crumb bars:

For the Crumble

  • All-purpose flour
  • Brown sugar
  • Granulated sugar
  • Cinnamon
  • Cardamom
  • Large egg
  • Cold butter

For the Apple Pie Filling

  • 3 apples
  • Granulated sugar
  • Cornstarch
  • Cinnamon

How to Make Apple Pie Bars

Preheat the oven to 375 degrees F. and line a 9×13 pan with foil with an overhand on all sides. Lightly grease the pan with softened butter.

Step 1: Make the Crumble

In a medium bowl, mix the flour, brown sugar, granulated sugar, cinnamon, cardamom, and salt. Mix in the egg and cut in the butter. You can use a pastry blender, a food processor (although be careful not to overmix, you want crumbles), or even a stand mixer. Mix until pea-size clumps form. Press half of the crumble into the bottom of the prepared pan.

Step 2: Shred the Apples

Shred the apples and squeeze out as much moisture as possible. Add them to a separate bowl with the sugar, cornstarch, and cinnamon; mix until all the apples are coated. Sprinkle the apple mixture over the bottom layer of crumble in the pan. Then crumble the remaining dough over the apples.

Step 3: Bake

Bake for 25 to 30 minutes, or until the top is beginning to turn golden. Cool completely before cutting into bars or squares.

Which Apples are Best for Crumb Bars?

Always choose your favorite baking apple or variety you use when making an apple pie. Here are some of my favorites:

  • Honey Crisp
  • Granny Smith
  • Gala
  • Pink Lady

  • Braeburn

How Many Servings Are in Apple Pie Bars

You can cut these bars into squares or rectangles, depending on how large you want the servings.

I like to cut them into 15 squares, which means three cuts lengthwise and five cuts widthwise.
