Late October One Pot Dinners Week: There’s something utterly delicious about fall one-pot dinners. Healthy, one-pot simmered food to nourish those you love. Dinners this week are simple, satisfying, and perfect for late October.
I can’t let the last week of October pass without another round of one-pot dinners. There’s something enriching about a pot that simmers for hours, permeating the home with the scents and tastes of fall.
While these dinners, don’t worry, won’t take hours… they will satisfy the urge for late October vibes.

Late October One Pot Dinners
We’re beginning the last full week of October on a healthy note with a super easy one-pot lentil soup recipe. In fact, it’s been a highly popular recipe on the website this month. Serve with greens and slices of whole-grain bread or naan to round out the meal.
For Tuesday, it’s a quick and easy one-pot Taco Mac and Cheese recipe that’s always a family favorite. Add healthy condiments and greens.
On Wednesday it’s a quick but utterly delicious skillet braised chicken recipe with white beans and kale.
Thursday’s seafood dinner is an easy, few ingredient fish stew I can’t wait to make!
Chili is always appropriate for fall Fridays, especially those leading up to Halloween. This chili is a healthier, slow cooker version that we love.
