Instructions
Preheat the oven to 350°F.
Add the cherry tomatoes, basil, and garlic to a 9 x 13-inch baking dish. Toss with olive oil, and then place the Brie in the center of the dish and also drizzle with olive oil.
Bake for 35 minutes or until the brie rind has softened and the cheese is melted.
While the cheese is baking, cook pasta in salted water according to package instructions. Drain and set aside.
Remove the cheese from the oven and immediately stir with the tomatoes until it creates a sauce. As the brie rind separates from the melted cheese, remove and discard. Toss with the pasta and serve with shredded Mozzarella and Parmesan cheese if desired.
Notes
Pasta: Use any pasta you prefer or have on hand. Cook the pasta while the brie bakes according to package instructions.
Cheese: I love mozzarella and Parmesan, but you can swap for your favorite cheese, or even skip it.
