While I’m a huge fan of feta cheese and love Baked Feta Pasta, this baked brie pasta is equally simple and delicious. And for those who aren’t in love with feta, here’s a creamy, delicious alternative.
And it might just become your next favorite pasta dish! Especially when looking for easy weeknight dinners.
Oh, and if you skip the pasta, it makes a delicious dip with pita, chips, or veggies!
Here’s what you need:
Baked Brie Pasta Ingredients
- Cherry tomatoes
- Fresh basil (or other fresh herb you love, like thyme)
- Wheel of Brie cheese
- Olive oil
- Garlic cloves
- Pasta (any pasta shape you have on hand)
- Cheese: I love adding shredded mozzarella and parmesan for more cheesy goodness!
How to Make Baked Brie Pasta
Essentially, you are making a delicious, cheesy sauce that’s utterly simple and completely delicious. Much like the 3 ingredient World’s Best Pasta Sauce, you don’t need much to make a great tomato sauce.
Here’s how to make this easy pasta dish. Begin by preheating the oven to 350°F.
Step 1: Add ingredients to baking dish
Add the cherry tomatoes, basil, and garlic to a 9 x 13-inch baking dish. Toss with olive oil, and then place the Brie in the center of the dish and also drizzle with olive oil.
Step 2: Bake & cook pasta
Bake for 35 minutes, or until the brie rind has softened and the cheese is melted. While the cheese is baking, cook the pasta in salted water according to the package instructions. Drain and set aside.
Step 3: Stir, toss & serve
Remove the dish from the oven and immediately stir until it creates a sauce. As the brie rind separates from the melted cheese, remove and discard. Toss with the pasta and serve with shredded Mozzarella and Parmesan cheese if desired.
Which pasta did you use?
I found this Sicilian Busiati Pasta at World Market. I fell in love with the shape, and it is really delicious, too. But honestly, you can use whatever shape you have on hand, from macaroni to penne to even spaghetti.

Notes
- Pasta: Use any pasta you prefer or have on hand. Cook the pasta while the brie bakes according to package instructions.
- Cheese: I love mozzarella and Parmesan, but you can swap for your favorite cheese, or even skip it.
