(14-ounce) can black-eyed peas
drained and rinsed
1/4
red onion
finely chopped
1/4
cup
sour cream
1
(4-ounce) can diced chilis
I love fire-roasted chilis
1
cup
cheddar cheese
grated (I prefer sharp cheddar but Pepper Jack is really good too)
3
tablespoons
salsa
1/2
teaspoon
ground cumin
1/2
teaspoon
chili powder
Pinch
red pepper flakes
salt and pepper

Instructions
Preheat the oven to 350°F and coat an 8 x 8 inch baking dish (or 1½ qt) with nonstick cooking spray.
Mash half of the black-eyed peas and add both the whole and the mashed into a large bowl.
Add the onion, sour cream, diced chilis, cheese, salsa, cumin, chili powder, red pepper flakes, salt, and pepper to taste. Stir to combine.
Spread the dip into the prepared baking pan.
Bake for 20 to 30 minutes, or until hot and bubbling. Top with additional cheese if you want along with cherry tomatoes and serve with tortilla chips.
