This Chocolate Chip Rolo Blondies recipe is a decadently delicious bar cookie, packed with chocolate chips and oozing, melty caramel. It's, um, rather incredibly yummy!
Preheat the oven to 350 degrees F and line an 8 x 8-inch pan with parchment paper or foil sprayed with cooking spray.
Combine melted butter and sugar in a large bowl and stir well. Add egg and vanilla extract; stir until completely combined. Set aside.
In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually stir in the flour mixture until combined. Be careful not to over mix. Fold in the chocolate chips.
Spread a little more than half of the batter into the prepared baking pan so that the bottom of the pan is completely covered. Evenly set the Rolo candies on top of the batter. Be sure they are sitting on their "base".
In spoonfuls, drop the remaining blondie batter over the Rolos. use a spatula to smooth the batter over the candies. It won't completely cover the tops, but that's OK!
Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean with a few crumbs attached.
