I’ll always love my simple Salted Butterscotch Blondies recipe, but if you’re a chocolate fan… and a caramel fan, the marriage of the two is a delightful experience.

Rolo Cookie Bars
These bar cookies are among our favorites. They are truly very gooey, very chocolaty, and super simple to make.
One day, while browsing the Crumbl Cookie website, one of that week’s flavors was a caramel chocolate chip cookie. The image stuck in my mind, and the cravings wouldn’t go away. There isn’t a store close by… so what’s a girl to do? Make them at home… thus, these Chocolate Chip Rolo Blondies.
While these blondies are soft, they’re not mushy. The edges are firm, the centers are deliciously chocolaty and soft.
It’s a quick and easy recipe to have on hand for impromptu gatherings, game or movie nights… or Friday treats.
Or when you also do not have a handy Crumbl outlet nearby.
They freeze well too. Not that many of mine last that long.
What Are Blondies?
Much like brownies, blondies are a rich and sweet, vanilla-based bar cookie that is baked and cut into squares.
In this case, we’ve also added chocolate chip and Rolo candies for that rich, caramel touch.
How to Store Blondies
Tightly wrapped or in an airtight container, blondies will keep for 3 days at room temperature, 1 week in the refrigerator, or up to 3 months in the freezer.
Chocolate Chip Rolo Blondies Ingredients
Here’s a list of ingredients you’ll need to make Rolo Blondies (specific ingredient measurements are in the recipe card at the very bottom of this post).
- Unsalted butter, melted
- Brown sugar
- Granulated sugar
- Large egg
- Vanilla extract
- All-purpose flour
- Cornstarch
- Baking powder
- Salt
- Chocolate chips
- Rolo chocolates
How Many Rolo Chocolates Do You Need?
These blondie ingredients require simple ingredients you may already have on hand. With the exception of Rolo Candies.
I like to buy a bag of Rolos, but on the last couple of shopping trips, my market didn’t have them. Four rolls of Rolo chocolates were plenty for the 8 x 8 or 9 x 9 size recipe.
I used 30 Rolos, six rows of five.
How to Make Chocolate Chip Rolo Blondies
Preheat the oven to 350 degrees F and line an 8 x 8-inch pan (or 9 x 9-inch pan) with parchment paper or foil sprayed with cooking spray.
Step 1: Melt the butter and combine the wet ingredients
Combine melted butter and sugar in a large bowl and stir well. Add egg and vanilla extract; stir until completely combined. Set aside.
Step 2: Add the flour and dry ingredients
In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt. Gradually stir in the flour mixture until combined. Be careful not to over mix. Fold in the chocolate chips.
Step 3: Assemble the Rolo Blondies
Spread a little more than half of the batter into the prepared baking pan so that the bottom of the pan is completely covered. Evenly set the Rolo candies on top of the batter. Be sure they are sitting on their “base”.
In spoonfuls, drop the remaining blondie batter over the Rolos. use a spatula to smooth the batter over the candies. It won’t completely cover the tops, but that’s OK!
Step 4: Bake and let cool
Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean with a few crumbs attached.
Let cool for an hour before cutting into squares.
