Add pork tenderloin to a 6-quart slow cooker and season with salt and pepper.
Combine orange juice, soy sauce, minced or pressed garlic, and ground ginger.
Pour orange ginger sauce over the pork tenderloin and add the lid to the slow cooker.
Cook on high for 2- 2 ½ hours or low for 4 hours, until the pork tenderloin reaches at least 145°F and is fall-apart tender.
Remove from the slow cooker and rest for 10 minutes. Transfer cooking sauce into a saucepan and bring to a boil. Add the cornstarch slurry, and continue to simmer until it's as thick as you like.
