Preheat the oven to 425℉. Line a baking dish with foil. Place a baker's rack inside the dish and spray with cooking spray.
Pat the wings dry with a paper towel. Then, add them to a bowl and toss them with baking powder, salt, and pepper. Place them on the prepared baking rack, ensuring they are not crowded.
Bake for 20 minutes, and then turn the wings. Bake until they reach an internal temperature of 165℉. The total cooking time will vary depending on the size of your wings. Remove from the oven, toss in buffalo sauce (be careful because they are hot!) and enjoy!
Notes
Wings – I prefer using wingettes and drumettes, but you can also use the whole chicken wing.
Baking powder—If possible, use aluminium-free baking powder. Its neutral flavor is perfect in this dish. If you don't have any on hand, use traditional baking powder. Toss the wings well, ensuring they are evenly coated with the baking powder. You want to avoid thick patches of baking powder.
Buffalo Sauce—I'm using Frank's Hot Sauce, but you can use your favorite brand (I also like Whole Foods 360 buffalo sauce). If you like a sweeter sauce, add 1-2 teaspoons of brown sugar (or to taste).
