Cut the avocados in half lengthwise. Remove the pit, remove the avocado from the skin, and place into a bowl.
Add the lime juice, salt, cumin, and cayenne (if using) and mash with a potato masher, fork, or pastry cutter until half chunky, half smooth, and creamy. Fold in the onions, garlic, and fresh cilantro.
Serve with tortilla chips, pita chips, or cut veggies.
Notes
If the avocados are firm, use a pastry cutter -- it makes the job a LOT easier! Also, I read that if you need to refrigerate the guacamole, place half an onion on top to preserve its color. It actually works!
