Instructions
Combine mayonnaise, Dijon mustard, ketchup, and dill pickle brine in a small bowl. Whisk until smooth.
Add smoked paprika, cayenne pepper, and maple syrup. Whisk to combine.
Taste and season with salt and pepper. Adjust pickle brine for tanginess, cayenne for heat, or maple syrup to balance.
For best flavor, refrigerate for at least 30 minutes before serving to allow flavors to meld.
Serve on burgers, grilled chicken sandwiches, or as a dipping sauce.
Notes
Make ahead:
This sauce keeps refrigerated in a sealed jar for up to one week and improves with time.
Swap:
Honey works just as well as maple syrup — use whichever you have on hand.
Heat level:
As written, this is mild-to-medium. Increase cayenne to ½ teaspoon for more heat.
Pickle brine:
Use the brine from a jar of dill pickles. Bread and butter pickle brine will make the sauce sweeter — adjust maple syrup accordingly.
