The Sauce That Won the Taste Test

I've made a lot of burger sauces over the years. The classic versions - mayo, ketchup, a little mustard - are perfectly fine. But fine wasn't what I was after.

Ingredients

Make Ahead + Storage

This sauce actually gets better after 30 minutes in the refrigerator as the flavors come together. Make it the morning of your cookout and it'll be at its absolute best by the time the grill is hot.

Stephanie's Notes

  • A note on the maple syrup: I know it sounds unexpected in a burger sauce, but it's a small amount, and it does something lovely - it softens the acidity of the pickle brine without adding obvious sweetness. If you're skeptical, start with half the amount and taste. You can always add more.
  • On the cayenne: this is written as a mild-to-medium heat. If you're feeding a crowd with varied spice preferences, start on the lower end. If it's just you and people who like a little heat, lean in.
