With summer on the horizon and grilling season continuing well into fall, I find myself making these burgers most of the year.

What Makes These Burgers Special?
It’s all in the spice mix! I recently wrote an article on 6 Easy Recipes Using Weber Seasonings. One of the four spice blends I worked with was Chicago Steak Seasoning. It’s a peppery, savory seasoning that tastes exactly like a steakhouse should. I highly recommend grabbing one at Amazon or your local market. It’s a seasoning you’ll use all year!
You can make your own if you can’t get your hands on this spice rub. While there isn’t a clear substitute, this is close.
Steakhouse Seasoning Mix
- 1 tablespoon dry mustard
- 2 teaspoons granulated garlic
- 2 teaspoons coarsely ground black pepper
- 1 teaspoon sweet smoked Spanish paprika
- ½ teaspoon dried thyme
- ¼ teaspoon red pepper flakes
How to make these burgers
Here’s how easy it is to make delicious grilled beef burgers!
Step 1: Add the breadcrumbs, salt, Worcestershire sauce, ketchup, and a steak seasoning to a large bowl and mix well. Then gently mix in the ground beef just until combined. Be careful not to overmix the beef mixture as it can lead to tough, dense, and chewy patties.
Step 2: Divide the beef into equal portions and form a ball. Flatten into 1-inch thick patties. With your thumb, form a slight depression in the center of each patty to prevent the burgers from expanding on the grill.

Step 3: Grill the burgers until nicely browned on the first side, then flip and continue grilling until desired doneness.
How Long Do You Grill Burgers?
Here is a brief overview of cooking times when grilling 1-inch thick burgers, depending on how hot the grill is. As always, use a meat thermometer to ensure the burger reaches your desired doneness.
- Medium-Rare: About 6-7 minutes total (3-3.5 minutes per side).
- Medium: About 7-8 minutes total (3.5-4 minutes per side).
- Medium-Well: About 9-10 minutes total (4.5-5 minutes per side).
- Well-Done: 10+ minutes total (5+ minutes per side).
How hot should the grill be for burgers?
A good target grill temperature for grilling thicker burgers is around 400°F. If you’re using a charcoal grill, ensure the coals are covered with ash and arranged in a two-zone method for better heat control.
Grilling Tips
To grill delicious beef burgers that are on the thicker side:
- Preheat your grill to medium-high heat (about 400°F)
- Grill for 5-7 minutes per side, depending on thickness, or until the desired doneness is reached, around 160°F.
- Avoid pressing down on the patties, which can release juices and make the burgers dry.

Grilled Beef Burgers Recipe
Ingredients
- 1/4 cup unseasoned bread crumbs or 1 slice white bread chopped finely
- 1/2 teaspoon kosher salt
- 2 teaspoons Worcestershire sauce
- 1 tablespoon ketchup
- 1 tablespoon steak seasoning
- 1 1/2 pounds lean ground beef
- 4 hamburger buns

- Preheat the grill to high heat. In a large bowl, add the breadcrumbs, salt, Worcestershire sauce, ketchup, and steak seasoning; mix well.
- Add the ground beef. Gently mix everything together until just combined. Be careful not to overmix. Divide the beef into 4 equal portions and form a ball. Flatten into about 1-inch patties. - Grill the burgers, until nicely browned on the first side, 2-4 minutes. Then flip the burgers and continue grilling until desired doneness.
Notes
- Make Ahead and Freeze: I like to double this burger recipe and freeze uncooked burgers for up to 3 months. They make fantastic, quick, and easy BBQ burgers. Freeze on a baking sheet to retain their shape. Once frozen, transfer to an airtight freezer container. Defrost in the refrigerator overnight and cook as directed.
- Homemade Steakhouse Seasoning: 1 tablespoon dry mustard, 2 teaspoons each of granulated garlic or garlic powder, coarsely ground black pepper, 1 teaspoon sweet smoked Spanish paprika, ½ teaspoon dried thyme, and ¼ teaspoon red pepper flakes.
