Combine the flour, sugar, salt, cinnamon, and baking powder in a medium-sized bowl. In a separate bowl, whisk the oil, honey, and milk. Stir the wet ingredients into the flour mixture until the dough comes together, adding more milk if necessary. Mix until smooth.
Wrap the dough and chill until firm, about 1 hour or longer if needed. The dough is soft so you will need it to stiffen up in the refrigerator.
Preheat the oven to 350℉ and line two baking sheets with parchment.
Divide the dough in half. On a floured sheet of parchment, roll each portion out thinly, about ⅛ inch thick. I like to roll until the long side of the rectangle is about 12 inches by about 7.5 inches. With a pizza cutter, trim the edges (you can use these later to form cookies with the scrap dough).
Using a pizza cutter, cut the dough into about 2 x 5-inch rectangles. Score the middle with the back of a knife, both lengthwise and crosswise. Then, use a fork to prick the cracker in each section to resemble a classic Graham Cracker pattern.
Carefully transfer the parchment paper to a sheet pan and bake for 10-12 minutes.
Let cool on the sheet pan for a couple of minutes before gently separating the crackers into rectangles.
