These Fudgy Mint Chocolate Brownies are densely rich with a double dose of chocolate and that oh-so-yummy distinctively cool mint flavor. Easy to make in both mini bites or in an 8 x 8 baking pan. Both ways are incredibly delicious and addictive to mint chocolate lovers everywhere.
Preheat oven to 350 degrees. Coat a 9 x 9-inch pan with nonstick cooking spray. Set aside.
In a bowl, add the melted butter and sugar; stir to combine. Then stir in the cocoa, salt, baking powder, and vanilla. Whisk in the eggs and continue whisking until the batter is smooth.
Fold in the flour and chocolate and mint chips with a spatula until no dry streaks of flour are visible.
Transfer the batter to the prepared pan and bake for 23 to 25 minutes or until a toothpick inserted 1½ inches from the side comes out mostly clean. Let cool before cutting into squares.

To Make Mini Brownies
Instead of transferring the batter to a square pan, spoon batter into a prepared mini muffin tin. Bake for 12 to 15 minutes or until a toothpick inserted in the center comes out mostly clean. Run a knife around the edges of the mini brownie to lift out of the pan and set it on a cooling rack.
