It’s nearing St. Patrick’s Day and I’m thinking of all things deliciously Irish. Along with those cravings comes a distinct need for mint chocolate. Although, if I’m honest, I might have an obsession with it all year round.

These Mint Chocolate Brownies help fill that need. Well, along with Chocolate Chip Mint ice cream, a favorite as long as I can remember. In fact, my first memory of ice cream cones was of chocolate chip mint.

Mint Chocolate Brownie Ingredients

The ingredient list is simple with one addition. Gather these ingredients:

  • Butter
  • Granulated sugar
  • Unsweetened cocoa powder
  • Baking powder
  • Vanilla
  • Large eggs
  • All-purpose flour
  • Chocolate chips
  • Mint chips (or peppermint extract)

2 Ways to Make Mint Chocolate Brownies

I love these brownies any way I’ve made them. This recipe is scaled to make 24 mini bites or 16 squares in an 8 x 8 baking dish. The mini bites are made simply in a mini cupcake or muffin tin.

The simple batter begins with melted butter, to which you will whisk in the sugar and cocoa powder until glossy and smooth. Then add in the salt, baking powder, and vanilla, again, whisking to combine. The eggs come next. I’m still using a whisk here until the eggs are fully stirred in.

Finally, the dry ingredients will be added. This is the point where I swap my whisk for a spatula and add the flour and then fold in the chocolate and mint chips. Transfer the batter into the preferred baking vessel and bake for the prescribed time. Mini brownies will bake from 12 to 15 minutes and the 8 x 8 baking pan will take about 32 minutes. Cool completely before cutting into squares

Ingredients 

  • 10 tablespoons butter melted
  • 1 ¼ cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 cup chocolate chips
  • 1/2 cup mint chips

Instructions

  • Preheat oven to 350 degrees. Coat a 9 x 9-inch pan with nonstick cooking spray. Set aside.
  • In a bowl, add the melted butter and sugar; stir to combine. Then stir in the cocoa, salt, baking powder, and vanilla. Whisk in the eggs and continue whisking until the batter is smooth.
  • Fold in the flour and chocolate and mint chips with a spatula until no dry streaks of flour are visible.
  • Transfer the batter to the prepared pan and bake for 23 to 25 minutes or until a toothpick inserted 1½ inches from the side comes out mostly clean. Let cool before cutting into squares.

Notes

To Make Mini Brownies

  1. Instead of transferring the batter to a square pan, spoon batter into a prepared mini muffin tin. Bake for 12 to 15 minutes or until a toothpick inserted in the center comes out mostly clean. Run a knife around the edges of the mini brownie to lift out of the pan and set it on a cooling rack.
