When you need a simple comfort food, these Muffin Tin Mini Turkey Meatloaves are a healthy and easy option. I love that they're family-friendly, perfectly proportioned, and even a candidate for make ahead meals.
Preheat the oven to 350 degrees F. Generously coat a 12-cup standard muffin tin with cooking spray. Set aside.
Into a medium size bowl add the oats and milk; stir and let sit a couple of minutes. Then add the onions, beaten egg, ¼ cup ketchup, red pepper flakes and salt and pepper to taste; stir to combine. Finally, add the ground turkey and mix together thoroughly.
Drop ¼ cup portions or scoops of meatloaf into the prepared muffin tin cups. Top each meatloaf with a drizzle of the remaining ¼ cup ketchup.
Bake uncovered for about 40 minutes. Remove from the oven and let sit for 5 minutes before serving.

These freeze best cooked without glaze - this should be added once they're thawed and you're reheating them.
