Finely shred a rotisserie chicken and place it in a large bowl. Stir in carrots, celery with their leaves, parsley, scallions, raisins, and apples. Then, stir in the lime juice.
Add mayonnaise and gently combine until it’s all incorporated. Taste and adjust seasoning with salt and pepper if needed. Transfer to a serving dish and garnish optionally and popularly with vegetable chip sticks and red onion rings.
Serve as a sandwich on your favorite bread or brioche bun, a salad, or as a side.
