What is Brazilian Chicken Salad or Salpicão de Frango?
Salpicão, a Brazilian Chicken Salad, is as varied and unique as the American Waldorf Chicken salad. Cooks worldwide have their own recipes and ideas for chicken salad with common ingredients like chicken, apples, and raisins tossed together in a mayonnaise base. But this delicious Brazilian recipe variation is one I know you’ll love!
We love it with the addition of scallions, nuts, and pineapples.
Ingredients
What makes this dish particularly easy and quick is using a rotisserie chicken. It adds a juicy element that only enhances its already delicious taste!
You will find ingredient measurements in the recipe card at the bottom of this post, but here is a quick list of what you will need:
- Cooked shredded chicken: Perfect for leftover chicken, or pick up a rotisserie chicken and finely shred it.
- Carrots: peeled and shredded.
- Celery: chopped with their leaves.
- Fresh parsley: chopped.
- Scallions or green onions: thinly sliced.
- Pineapple: Fresh pineapple is delicious, but canned pineapple works well, too. Just be sure to drain and cut it into bite-size pieces.
- Raisins: dark or golden.
- Apples: peeled or unpeeled and sliced or finely diced.
- Mayonnaise: I prefer light mayonnaise, but use your favorite.
- Juiced lime
Garnish Ideas
Thick slices of red onion are often served with this chicken salad as well as additional lettuce. I also like to tuck in thin slices of grapes or plums when in season for a delicious variation.

Serve this chicken salad as a sandwich on your favorite bread, brioche bun, or ciabatta. You can also serve it as a salad or a side salad for lunch or brunch. Often, it is served with vegetable chips and thick slices of red onion rings.

SALPICÃO: Brazilian Chicken Salad
Ingredients
- 4 cups shredded rotisserie chicken
- 2 medium carrots peeled and shredded
- 2 cups celery chopped
- 1/4 cup chopped fresh parsley leaves
- 1/4 cup thinly sliced scallions
- 2 cups fresh pineapple diced or (16-ounce canned pineapple, drained and diced)
- 1/2 cup raisins
- 2 apples peeled and finely diced (we like 1 green and 1 red apple)
- 1 cup light mayonnaise perhaps a bit more if you like it creamier
- 1 lime juiced
- Salt and freshly ground black pepper to taste
- 1/2 red onion optional: peeled and cut into 1/4-inch thick rings for garnish.
Instructions
- Finely shred a rotisserie chicken and place it in a large bowl. Stir in carrots, celery with their leaves, parsley, scallions, raisins, and apples. Then, stir in the lime juice.
- Add mayonnaise and gently combine until it’s all incorporated. Taste and adjust seasoning with salt and pepper if needed. Transfer to a serving dish and garnish optionally and popularly with vegetable chip sticks and red onion rings.
- Serve as a sandwich on your favorite bread or brioche bun, a salad, or as a side.
