When it comes to dinner salads and main course salads, Chicken Cobb Salad tops the list. It’s everything you love about fresh garden greens and herbs tossed with tangy and savory ingredients like crumbled blue cheese and ripe avocados for creaminess.

And the Avocado Ranch Salad Dressing? Um… absolutely, yes! Can you buy a bottle at the market? Yep– and I won’t tell if you do. Time and all of that. But truly, this dressing is so easy and contains mainly pantry ingredients… you might just want to give it a try!

Variations of Cobb Salad

While the origins of Cobb salad are debatable, the ingredients, most often, are not. Most classic Cobb salads contain chicken, tomatoes, hard-boiled eggs, bacon, blue cheese, and avocados.

And it’s hard to improve on a classic!

What does vary is how the salad is presented. Do you like the ingredients in beautiful rows marching down a bed of greens? Or, how about a chopped salad vs a torn salad? Do you like full-size tomatoes sliced or the ease of only halving cherry tomatoes?

It’s one of the things we love about Cobb salads! You can make it entirely yours with your own signature style.

Chicken Cobb Salad Ingredients

While the ingredient measurements are in the recipe card below, here is a list of what you will need and some notes as well:

  • Chicken: This is an excellent recipe for using leftover cooked chicken. I love to use my Grilled Chicken recipe in this salad and even plan for leftovers. If you’re cooking chicken for the salad, I prefer chicken tenders as they cook more quickly, and do season them with lemon pepper seasoning or herbs of choice (Cajun seasoning is delicious too).
  • Olive oil: for cooking the chicken in a skillet
  • Greens: While Romaine lettuce is classic, I have a garden bursting with greens and use a mixture in this salad. Use whatever greens you have handy.
  • Fresh herbs give this Cobb salad an irresistible herbaceous flavor. Use fresh if possible. I like a mixture of finely chopped fresh herbs like chives, basil, cilantro, oregano, or even parsley.
  • Tomatoes: I like to use halved cherry tomatoes for quick prep and easy bite-size pieces, but sliced fresh tomatoes are equally delicious.
  • Cheese: Crumbled blue cheese is classic, and honestly, for me, it isn’t a cobb salad without it, but cubed cheddar cheese is also delicious if that’s more your thing. 
  • Bacon: You will need cooked bacon. You can buy precooked bacon in a pinch, but if you’re cooking it yourself, cook it in the same skillet as the chicken for added flavor.
  • Hard-boiled eggs: Use your favorite method for hard-boiling eggs. My preference for this salad is to cook them in boiling water for 8 minutes. Consider making the eggs ahead for quick prep.
  • Avocados: You will need one for the salad and one also for the dressing.

Equipment

Ingredients 

  • 1 pound chicken tenders or 2 cups cooked or leftover chicken (like Rotisserie or Grilled Chicken)
  • 2 tablespoons lemon pepper seasoning
  • 1 tablespoon olive oil
  • 6 cups lettuce chopped or shredded
  • 3 tablespoons fresh herbs like finely chopped chives, basil, cilantro, oregano or parsley
  • 1 cup cherry tomatoes halved
  • 1 cup blue cheese crumbled
  • 5 slices cooked bacon crumbled
  • 4 hard boiled eggs sliced
  • 1 avocado chopped

Avocado Dressing

  • 1 avocado chopped
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 1/2 teaspoons vinegar like white vinegar, or vinegar of choice like chive blossom vinegar if handy
  • 2 teaspoon lemon juice
  • 3 tablespoons fresh chives chopped
  • 1/2 teaspoon garlic powder
  • salt and pepper to tate

Instructions

For the Chicken

  • Heat olive oil in a skillet over medium-high heat. Season chicken tenders with lemon pepper and salt to taste. Saute until cooked through and charred in places, turning halfway through; about 10 to 12 minutes. Once cooled, chop or thinly slice the chicken. If using cooked chicken, chop into bite size pieces, taste and season with salt and pepper as needed.

For the Avocado Dressing

  • Add dressing ingredients to a blender and blend until creamy. Add water or buttermilk as necessary to thin the dressing if needed. Add salt and pepper to taste.

For the Cobb Salad

  • In a large bowl, toss the greens and herbs with half of the dressing. Arrange the chicken, tomatoes, cheese, bacon, avocado, and eggs on top. Toss gently and add additional dressing if desired!
