On a baking sheet, toss the sweet potatoes with 2 tablespoons of olive oil. Season with salt and black pepper. Bake for 10 minutes.
In a bowl, toss together 1-2 tablespoons of olive oil, the chicken, chili powder, paprika, onion powder, garlic powder, cumin, salt, and pepper.
Nestle the chicken around the potatoes and bake for 22-30 minutes, until the chicken is cooked through. Baking time will depend on the size and thickness of the chicken. Meanwhile, make the Avocado Caesar Dressing.
To make the dressing: In a food processor or blender, process the avocado, water, mayo, garlic, lemon juice, Dijon, and salt. Taste and adjust seasoning.
For the salad, combine the Romaine lettuce and herbs. Drizzle with a few tablespoons of the dressing, turning to coat, and set aside.
