This dish was inspired by a yearning for Caesar salad, quick and easy sheet-pan chicken, and the dressing I drizzle over chicken tacos. It was also highly influenced by an incessant craving for sweet potatoes lately.

  • Sweet potatoes: For the best flavor, I look for brightly colored sweet potatoes, like Garnet. We’ll peel and cut them like sweet potato fries.
  • Olive oil: For flavor and roasting.
  • Chicken: You can use either chicken breasts or chicken thighs or a mix of both. When I come home with extra-large chicken breasts, I will cut them in half.
  • Chicken Dry Rub: Chili powder, smoked paprika, onion powder, garlic powder, and cumin.
  • Salad: Romaine, fresh herbs (mix of your favorite like parsley, oregano, dill or basil). Lemon
  • Toppings: Feta cheese and avocado chunks

Creamy Caesar Dressing Ingredients

  • Avocado: Makes the dressing super creamy, delicious, and beautiful.
  • Mayo: This brings the dressing its ultimate creaminess. You can use vegan mayo or substitute it with Greek yogurt, although the flavor will be a bit different.
  • Dijon mustard to emulsify the dressing and for flavor.
  • Garlic: Adds that extra zip that is irresistible
  • Lemon juice for bright flavors

Honestly, this dressing is so good that I put it on everything—dips, salads, roasted veggies (yes, even crackers!).

How to Make This Sheet Pan Chicken Recipe

Here’s how to make this easy sheet pan dinner! Begin by preheating the oven to 425 degrees F.

Step 1: Prepare the sweet potatoes

Cut the sweet potatoes into matchsticks or French fry shapes. They don’t have to be perfect or even all the same size! Toss with olive oil and season with salt and pepper to taste. Toss them onto the baking sheet and bake for 10 minutes while preparing the chicken.

Step 2: Season the chicken & bake

Combine the olive oil and dry rub seasonings in a small bowl. Add the chicken and turn to coat each piece evenly. Remove the pan from the oven and nestle the chicken between the sweet potatoes.   • 1 teaspoon onion powder

  • 1 teaspoon cumin
  • 4 cups romaine lettuce chopped
  • 1 cup mixed herbs basil, dill, parsley
  • 1/2 avocado sliced or chopped
  • 3/4 cup crumbled feta cheese

Avocado Caesar Dressing

  • 1/2 avocado divided
  • 1/2 cup water
  • 1/4 cup mayonnaise or Greek yogurt
  • 2 garlic cloves
  • 2 tablespoons lemon juice

Instructions
