Healthy One Pot Dinners Menu

Monday’s dinner is a gut healthy, meatless dinner filled with spinach, white beans, and roasted sweet potatoes. A hearty dinner salad as we enter spring’s salad season!

Tuesday’s dinner is a 3-ingredient versatile dish you can make in the crockpot, a skillet, or the Instant Pot. It’s a Mexican-inspired dish you can make for Taco Tuesday, or in a wrap with greens for a hearty meal. I’m adding lots of greens from my garden with chunks of avocado, cilantro, and lime wedges.

Wednesday’s dinner is a take-out favorite made easily at home. With simple ingredients and prep, it’s perfect for midweek when craving your favorite Chinese restaurant food.

Thursday’s dinner is a 20-minute low carb seafood sheet pan meal with salmon, teriyaki flavors and vegetables. Delicious and flavorful!

Friday’s dinner is a meal that you can’t let spring pass you by without making at least once. While the recipe is plant-based, you can easily add protein like cooked chicken, pork, or beef.

The Treat celebrates strawberry season in a delicious and 2-minute kind of way. Any guesses on what it is? I’m positive you already know!
