Late summer is at its most abundant, and this week's Mediterranean Diet meal plan makes the most of zucchini, tomatoes, peppers, cucumbers, fresh herbs, and berries. The menu begins with a Mediterranean zucchini frittata, followed by a quick tuna salad, colorful sheet-pan ratatouille, couscous salad with smoked salmon, and Greek turkey burgers.

Here's what's on the menu this week:
- Monday: Mediterranean Zucchini Frittata. Filled with zucchini, red onion, fresh dill, and creamy ricotta, this easy skillet frittata makes a lovely light dinner. Serve it with a tomato and cucumber salad and slices of toasted whole-grain bread or warm pita.
- Tuesday: Mediterranean Tuna Salad. This no-mayo tuna salad is packed with cucumbers, roasted red peppers, olives, capers, and fresh herbs. Serve it over greens, tucked into pita, or spooned onto grilled toast, with fresh summer fruit alongside.
- Wednesday: Sheet Pan Ratatouille with Polenta. Roasted eggplant, zucchini, peppers, tomatoes, onions, garlic, and herbs bring the flavors of late summer to this colorful meatless dinner. Spoon the vegetables over creamy polenta and serve with crusty bread or white beans for an especially satisfying meal.
- Thursday: Couscous Salad with Smoked Salmon. Tender couscous, crisp vegetables, herbs, feta, and smoked salmon make this an easy warm-weather dinner. Serve it chilled or at room temperature with lemon wedges and a simple leafy green salad.
- Friday: Greek Turkey Burgers. Finish the week with turkey burgers seasoned with spinach, red onion, feta, dill, and oregano. Top them with tzatziki, sliced cucumber, tomato, and extra feta, then serve with a Greek salad, grilled vegetables, or roasted potatoes.
- Treat: Yogurt Blackberry Popsicles. Made with ripe blackberries, thick Greek yogurt, honey, and lemon, these creamy frozen treats are a refreshing way to enjoy August berries.

Meal Prep and Kitchen Notes
Make the blackberry yogurt popsicles over the weekend. They need to freeze for at least eight hours or overnight, making them an ideal treat to prepare before the week begins. Once firm, remove them from the molds and store them individually wrapped in a freezer-safe container or bag.
For Monday's frittata, slice the zucchini and red onion and chop the dill ahead of time. Store everything separately in the refrigerator so the frittata can be quickly assembled and cooked when you are ready for dinner.
Tuesday's tuna salad comes together in about 10 minutes. The cucumber, onion, roasted peppers, and herbs can be chopped in advance; combine them with the tuna, olives, capers, lemon, and seasonings shortly before serving.
The sheet-pan ratatouille is especially useful for meal prep. Roast the vegetables a day or two ahead and reheat them on Wednesday, or serve them at room temperature over freshly prepared polenta. The ratatouille can also be enjoyed cold, and any leftovers make an easy side dish later in the week.
Prepare Thursday's salmon couscous salad base ahead by cooking the couscous, whisking the dressing, and adding the chopped vegetables and herbs. Refrigerate it in a covered container, then add the smoked salmon, feta, and a squeeze of lemon when serving. The salad can be refrigerated for up to three days.
For Friday, mix and shape the turkey burger patties earlier in the day and keep them chilled until cooking. Prepare the tzatziki or Greek yogurt sauce and slice the cucumber, tomato, and onion in advance for an easy end-of-week dinner.
