Light 30 Minute Summer Dinners Menu & Serving Ideas
Here's what's on the menu this week:
- Monday: Cold Sesame Noodles. Serve these cool peanut sesame noodles with sliced cucumbers, edamame, or fresh fruit. Add shredded chicken, grilled shrimp, or crispy tofu for a more substantial meal.
- Tuesday: Herbed Lemon Chicken Skillet. Serve the bright, lemony chicken with brown rice or quinoa and a simple green vegetable, such as steamed broccoli or green beans or a green bean salad.
- Wednesday: Beef Stir-Fry with Baby Bok Choy. Spoon the ginger beef and tender-crisp bok choy over brown rice or cauliflower rice. Orange slices, pineapple, or another fresh summer fruit would be a refreshing addition.
- Thursday: Easy Salmon Salad. This colorful main-dish salad is filled with salmon, crisp vegetables, greens, basil, and citrus dressing. Serve it with warm flatbread, crusty rolls, or a side of fresh berries.
- Friday: Curried Singapore Noodles. Finish the week with quick rice noodles tossed with curry, cabbage, peppers, onions, and snow peas. Serve them as a meatless meal or add crispy tofu or edamame for extra protein.
- Treat: Healthy Zucchini Spice Muffins. These soft, warmly spiced muffins are delicious for breakfast, afternoon snacks, or lunchboxes. Enjoy them with fresh fruit and a cup of tea or coffee.

Meal Prep Tips
Bake the zucchini muffins over the weekend and store them in an airtight container for the first few days of the week. Extras can be frozen and thawed individually whenever you need a quick breakfast or snack.
The Cold Sesame Noodles are also a good make-ahead choice. Prepare the noodles and peanut sauce in advance, but reserve the chopped peanuts, scallions, and any fresh cucumber until serving. If the sauce thickens in the refrigerator, loosen it with a small splash of warm water before tossing.
Wash and prepare sturdy vegetables such as carrots, snap peas, bok choy, cabbage, peppers, and onions early in the week. On Tuesday, cook extra brown rice to serve with the lemon chicken and save the remainder for Wednesday's beef stir-fry.
