What I Love About These Chicken Tacos
If you’re like us, you may often crave chicken tacos or a dish reminiscent of this favorite quick and easy meal (I’m thinking about my 15-minute Taco Salad recipe here).
And while I love my Baked Chicken Tacos, perfect for rotisserie chicken or leftover chicken, we often crave a taco with the most fabulous green sauce imaginable drizzled over tender, juicy, perfectly seasoned chicken thighs with smokey flavors that are irresistible to us!
So, on those evenings when I’m looking for a quick and tasty, 20-minute dinner, maybe on a Tuesday or a fun Friday, these chicken tacos always come to mind!
Recipe Overview
A quick and easy, tender and juicy chicken cubed and layered into corn tortillas with chopped red onion, fresh cilantro, and an amazing avocado sauce whipped up in a blender or food processor.
- Recipe Time: 20 minutes with 10 minutes of prep and 10 minutes of cooking
- Servings: 2-4 servings
- Equipment: Air Fryer or large skillet, blender, or food processor for the sauce
Let’s Make Chicken Tacos!
Here’s how to make these chicken tacos in the air fryer, oven baked chicken instructions are in the recipe card at the bottom of this post.
Season the Chicken Thighs
Toss the spices together and sprinkle over the chicken thighs in a bowl. Add the oil and toss with your hands or tongs until evenly coated. It’s important that the chicken is thoroughly coated.


Cook the Chicken
Place the chicken in the basket of an air fryer (alternate cooking instructions in the notes), and be sure to lay the thighs flat to make them as thin as possible and evenly spaced so air can circulate. Air fry at 415 degrees for 10-12 minutes. They should be golden and browned in spots and juicy and tender too!


Make the Sauce
Whirl the sauce while the chicken is cooking in a small food processor or blender. If it’s too thick, add water to thin to desired consistency. Add more avocado or sour cream/yogurt if it’s too thin.

Chop the Chicken & Make the Tacos
When the chicken is done, let it stand for a few minutes to cool slightly, then roughly chop or pull it into bite-sized pieces. Squeeze lime juice over the top and make your taco!

How to Serve
Add a spoonful of avocado sauce into a tortilla, with a hearty serving of juicy chicken, and finish with fresh cilantro, diced red onions, and maybe even more sauce! But you could also add pickled onions or a simple green salad on the side!

Chicken Tacos
- 1 pound boneless skinless chicken thighs
- 1 teaspoon paprika
- 1/4 teaspoon smoked paprika
- 3/4 teaspoon kosher salt
- 1 ½ teaspoon brown sugar
- 1 teaspoon cornstarch
- 2 teaspoons cooking oil like avocado oil
- tortillas for serving (I prefer corn tortillas)
- chopped red onion for serving
Avocado Cilantro Sauce
- 1 avocado
- 1/2 cup sour cream or plain Greek yogurt
- 1/2 cup fresh cilantro finely chopped (1 big bunch)
- 1 garlic clove
- juice from 2 limes about 1 tablespoon
- 1/2 teaspoon salt or to taste
- water as needed for consistency

Notes
- Chicken: While I’m using boneless skinless chicken thighs, you can also make these with chicken breasts. Be sure to slice them in half lengthwise if they are thick.
- Oven Instructions: Bake at 425 degrees for 20 minutes or until it reaches an internal temperature of 375 degrees F.
