Winter 30 Minute Dinners
This week, we’re spending less time cooking weeknight dinners and more time enjoying the winter season. Whether that’s out and about or cozied up at home in front of the fire.
These simple recipes are healthy, flavorful, and perfect for the last week of January.
Let’s look at this week’s dinner menu!
Winter 30 Minute Dinners Menu
Monday’s dinner is a creamy, meatless, vegetarian meal that’s hardy and packed with healthy ingredients like white beans, sun-dried tomatoes, and greens! Serve with a fresh, crisp salad.
Tuesday’s dinner combines some of my favorite ingredients in this easy skillet meal. Sweet potatoes and winter will always belong together. In fact, if you have leftover sweet potatoes, make this Easy Sweet Potato Breakfast Casserole ahead for quick, healthy breakfasts!
Wednesday’s dinner is a 15 minute skillet chicken and broccoli dish that’s quick and easy. Serve over your favorite grain (like rice) and a salad is always good as well.
Thursday’s dinner is filled with Mediterranean flavors in this simple baked seafood dish made with white fish, tomatoes, capers, tomatoes, and olives. Serve with your favorite grain or whole grain couscous for a delicious Thursday meal.
Friday’s dinner is a quick skillet meal using chicken tenders that are oh-so-deliciously spiced and a quick rice and orzo pilaf. Add your favorite veggies (I’m making roasted broccoli) and serve with a salad to round out the meal.
The Treat is winter-perfect, naturally sweetened, and contains a healthy, better-for-you ingredient we love!
