Instructions
Add 1 tablespoon butter to a large (12-inch) nonstick or well seasoned cast iron skillet and heat over medium-high. Add the bacon and cook until crispy (about 4 minutes). Remove from the skillet and drain on a paper towel-lined plate.
Drain the fat from the skillet, reserving about 1/4 cup in the skillet. Add the tortellini to the skillet in a single layer. Cook over medium heat, without stirring, untiled browned on one side; about 3 minutes.
Add 1 and 1/2 cups water to the skillet and season with salt and pepper (about 1 teaspoon each or to taste). Stir to combine, cover and cook until the pasta is tender. This time will depend on which tortellini you're using but should be about 3 to 5 minutes for cheese tortellini.
Once tender, remove the lid, add the corn and remaining 1 tablespoon of butter. Stir until the butter melts and the corn is cooked and warmed through. Taste and season with salt and pepper.
