Easy Skillet Tortellini with Corn and Bacon

Skillet Tortellini with Corn and Bacon is a quick and easy pasta dish, made in one skillet, that’s perfect for weeknight dinners or simple meals in 20 minutes or less. Packed with flavor from the tortellini and crispy bacon, it’s a recipe to revisit often!

And… it’s utterly delicious. It’s tortellini after all. Which makes it special all on its own!

Plus, it’s a pasta recipe you can easily adapt. For instance, if you want to add additional vegetables, think about snap peas, chopped asparagus, tomatoes, spinach or kale, or even broccolini or broccoli.

Think of it like a canvas you can make to be anything you want. For me, I love to reach for dishes like these on the weekends and empty the produce bin with whatever veggies are left from the week.

Otherwise, it’s delicious with greens, like an arugula salad lightly dressed with a simple vinaigrette.

Skillet Tortellini Ingredients

This skillet tortellini pasta is made with simple ingredients. The exact measurements I used are in the recipe card at the bottom of this post.

  • Bacon
  • Unsalted butter
  • Refrigerated tortellini
  • salt and pepper to taste
  • Frozen or fresh corn cut from a cob
  • Green onions
  • Fresh herbs like basil, oregano, or parsley for garnish

How to Make Skillet Tortellini with Corn and Bacon

This simple tortellini recipe takes about 20 minutes or less and is cooked in one skillet. Step-by-step instructions are in the recipe card at the bottom of this post. Here’s an overview:

Step 1: Cook the bacon

Chop and cook the bacon in a large skillet until crispy. Remove and drain while proceeding with the recipe.

Step 2: Cook the tortellini

Add the tortellini to the skillet in a single layer. Cook until browned on one side, then add water and seasoning. Cover and cook until tender.

Step 3: Add corn and serve

Add the corn to the skillet and continue to cook until done and warmed through. Serve with bacon and sliced green onions.

Skillet Tortellini Toppings

Add whatever pasta toppings you prefer. I like to garnish with the bacon, green onions sliced on the diagonal along with fresh herbs I’m growing in my garden. I love basil but oregano and even parsley is delicious and simple with this dish.

Depending on which tortellini you choose, adding additional Parmesan is always delicious and a drizzle of olive oil only elevates the dish!

Ingredients 

  • 4 bacon slices chopped into 1/2-inch pieces
  • 2 tablespoons unsalted butter
  • 20 ounces refrigerated tortellini
  • salt and pepper to taste
  • 12- ounce bag frozen corn or kernels from 4 ears of corn
  • 4 green onions sliced on diagonal

Instructions

  • Add 1 tablespoon butter to a large (12-inch) nonstick or well seasoned cast iron skillet and heat over medium-high. Add the bacon and cook until crispy (about 4 minutes). Remove from the skillet and drain on a paper towel-lined plate.
  • Drain the fat from the skillet, reserving about 1/4 cup in the skillet. Add the tortellini to the skillet in a single layer. Cook over medium heat, without stirring, untiled browned on one side; about 3 minutes.
  • Add 1 and 1/2 cups water to the skillet and season with salt and pepper (about 1 teaspoon each or to taste). Stir to combine, cover and cook until the pasta is tender. This time will depend on which tortellini you're using but should be about 3 to 5 minutes for cheese tortellini.
  • Once tender, remove the lid, add the corn and remaining 1 tablespoon of butter. Stir until the butter melts and the corn is cooked and warmed through. Taste and season with salt and pepper.
  • Serve topped with bacon and green onions.
