How to Make Tuscan Tortellini Salad
This simple Italian pasta salad takes about 10 minutes to make and it requires only a couple of steps.
Step 1: Cook the tortellini
Begin by cooking the tortellini according to package instructions. You will want the pasta to be al dente, not overcooked as it will fall apart in the salad.
Drain and rinse the pasta in cold water and add to a large bowl.
Step 2: Prepare the vegetables
Prepare and add the vegetables, cheese, and herbs to the bowl.
Step 3: Add Italian Vinaigrette and serve
Drizzle with Italian vinaigrette; toss to coat. Season with salt and pepper to taste.
Making Tuscan Tortellini Salad Ahead
This is a simple salad to make ahead. Assemble the salad ahead, toss with half of the Italian dressing, and do not add the spinach.
To serve, toss with the remaining Italian dressing and add spinach. Toss with additional cheese and fresh herbs for a fresh, crisp salad.

I made this and enjoyed it thoroughly. I modified it also to add ham and instead of using the vinaigrette I used Olive garden sweet Italian dressing. This also turned out very tasty.
Hi Mark! Thank you for trying the recipe and letting me know what you think. I’m so glad you liked it — and I love the idea of adding ham!
