This easy-to-make Tuscan Tortellini Salad just may just be your go-to pasta salad this summer. It’s quickly becoming mine!

Tuscan Tortellini Salad Ingredients

This tortellini salad is filled with all of our favorite Italian ingredients!

  • Cheese tortellini (refrigerated or frozen)
  • Tomatoes (grape or cherry)
  • Red onion
  • Salami (prosciutto or chopped bacon if you prefer. For a vegetarian dish, you can leave it out.)
  • Baby spinach
  • Parmesan cheese
  • Fresh Italian parsley

More Italian ingredients you may also want to add or swap:

  • Pepperoni
  • Cooked chicken
  • Ham
  • Oil packed sun-dried tomatoes
  • Chopped olives
  • Marinated artichoke hearts
  • Fresh mozzarella cheese
  • Basil

Homemade Italian Vinaigrette

This pasta salad is made with a homemade Italian Vinaigrette that is perfect for this tortellini salad but is also delicious tossed with greens too.

However… if you’re short on time, you can also use your favorite store-bought vinaigrette too!

Homemade vinaigrette, though, is super simple to make and keeps well in the refrigerator. To mix or emulsify, add the ingredients to a lidded jar and shake vigorously.

How to Make Tuscan Tortellini Salad

This simple Italian pasta salad takes about 10 minutes to make and it requires only a couple of steps.

Step 1: Cook the tortellini

Begin by cooking the tortellini according to package instructions. You will want the pasta to be al dente, not overcooked as it will fall apart in the salad.

Drain and rinse the pasta in cold water and add to a large bowl.

Step 2: Prepare the vegetables

Prepare and add the vegetables, cheese, and herbs to the bowl.

Step 3: Add Italian Vinaigrette and serve

Drizzle with Italian vinaigrette; toss to coat. Season with salt and pepper to taste.

Making Tuscan Tortellini Salad Ahead

This is a simple salad to make ahead. Assemble the salad ahead, toss with half of the Italian dressing, and do not add the spinach.

To serve, toss with the remaining Italian dressing and add spinach. Toss with additional cheese and fresh herbs for a fresh, crisp salad.

How to Store

Store the Tuscan Tortellini Salad in a covered dish and refrigerate for up to 3 days.

Tuscan Tortellini Salad is a simple pasta salad perfect for cookouts, potlucks, and gatherings all summer. This easy salad is filled with Italian ingredients like tomatoes and salami and is tossed with a homemade Italian Vinaigrette. Utterly delicious!

Ingredients

Tuscan Tortellini Salad

  • 1 lb. fresh or frozen cheese tortellini
  • 3/4 cup chopped salami or prosciutto
  • 1/2 cup baby spinach
  • 1/4 cup red onion, chopped
  • 1/2 cup cherry tomatoes, chopped or halved
  • 1/4 cup grated Parmesan
  • 1/4 cup fresh Italian parsley, chopped

Homemade Italian Vinaigrette

  • 2 garlic cloves, minced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon Italian seasoning
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • Dash red pepper flakes
  • salt and freshly ground black pepper to taste

Instructions

    1. In a large pot of salted boiling water, cook tortellini according to package directions. Drain and transfer to a large serving bowl.
    2. Make the vinaigrette: Whisk together garlic, olive oil, vinegar, lemon juice, Dijon, sugar, red pepper flakes, and season with salt and pepper to taste.
    3. To the bowl of tortellini, add salami, spinach, cherry tomatoes, red onion, and the vinaigrette; toss until well coated. Garnish with fresh grated Parmesan and Italian parsley.

  1. I made this and enjoyed it thoroughly. I modified it also to add ham and instead of using the vinaigrette I used Olive garden sweet Italian dressing. This also turned out very tasty.
