Tuscan Tortellini Salad is a simple pasta salad perfect for cookouts, potlucks, and gatherings all summer. This easy salad is filled with Italian ingredients like tomatoes and salami and is tossed with a homemade Italian Vinaigrette. Utterly delicious!
In a large pot of salted boiling water, cook tortellini according to package directions. Drain and transfer to a large serving bowl.
Make the vinaigrette: Whisk together garlic, olive oil, vinegar, lemon juice, Dijon, sugar, red pepper flakes, and season with salt and pepper to taste.
To the bowl of tortellini, add salami, spinach, cherry tomatoes, red onion, and the vinaigrette; toss until well coated. Garnish with fresh grated Parmesan and Italian parsley.

Making Tuscan Tortellini Salad Ahead
This is a simple salad to make ahead. Assemble the salad ahead, toss with half of the Italian dressing, and do not add the spinach.To serve, toss with the remaining Italian dressing and add spinach. Toss with additional cheese and fresh herbs for a fresh, crisp salad.
