Early Summer Dinners
Because Memorial Day is the unofficial beginning of summer, we’re kickstarting the season with simple and, in most cases, quick dinners packed with delicious flavors.
For Memorial Day, I love to start the season with delicious, smokey, and juicy ribs. This year we’re making foil-wrapped ribs everyone loves. But Instant Pot Ribs or Slow Cooker Ribs are delicious too!
Tuesday is a 15-minute salad recipe that depending on what Memorial Day leftovers you have, may be even quicker. I’m serving Easy Mexican Corn Salad that I’m hoping can be incorporated into Tuesday night’s dinner.
Wednesday is a healthy Greek chicken skillet dinner, and Thursday is a baked fish that’s ready in as little as 8 minutes.
Friday is grilled pizza and the treat is summer personified!
